Warm Spinach Salad

This warm spinach salad is great for these colder days we’ve been having. Serve along side some grilled salmon and a side of rice or farro to make it complete. Serves 2-4.

Ingredients

  • 1/2lb Spinach

  • 1 medium onion, halved and then thinly sliced

  • Goat Cheese

  • Dressing: 1/4 cup red wine vinegar, 2 tsp sugar, 1 tsp dijon mustard - mix the above ingredients in a blender, then slowly add 1/2 cup olive oil while the blender is on. Season with salt and fresh ground pepper and adjust to taste (add more sugar if you want!)

  • Optional: boiled egg cut in half; crispy bacon; sautéed wild mushrooms, dried cranberries

Saute the onion until caramelized. I do this by adding 1 or tsp of olive oil to a well seasoned cast iron, adding the onion with a little salt and fresh thyme if you have it. Stir the onion to coat and then cover with a tight fitting lid and cook on low for 45 minutes. Check once if you need but better to leave it covered the entire time.

Right before onion is finished, mix spinach with dressing. Then top with onion, goat cheese and any other toppings. Season with salt and pepper and serve immediately.
