Miso Glazed Eggplant

Try this simple yet tasty way of eating our Asian eggplants. Let this be a jumping off point to where you can start using these tasty eggplants in all sorts of cooking creations. Happy eating!

  • 4 Asian eggplant

  • 2 Tablespoons miso

  • 1 Tablespoon mirin - Japanese cooking wine

  • 2 Tablespoons sesame oil

Remove the stems from eggplant and cut in half lengthwise so that they lay flat. Mix ingredients for glaze until smooth and creamy. Grill eggplant with cut side to flame until slightly soft (approximately 5 minutes depending on heat of grill.) Turn and brush or spread glaze on cut side of eggplant. Close grill and cook until eggplant is soft and glaze is browned. Remove and serve. You can also prepare without a BBQ by pan searing the cut side of eggplant, applying glaze and browning in a 350 degree oven for 20 minutes.
